We average about 70 lbs.of cherries to produce one gallon of concentrate which is equivalent to about a 1/2 lb. of concentrate than it does cherries that are harvested early. It takes less high quality, ripe cherries to product 1 oz. This really depends on when they were harvested. How many cherries are in an ounce of concentrate?
